Core Responsibilities
Primary Functions
- Assist the head Grill Cook in preparing and cooking food items by grilling, broiling, and sautéing menu items to specification.
- Meticulously clean and sanitize the grill station, including surfaces, grates, hoods, and surrounding areas, at the start and end of each shift to meet health and safety standards.
- Prepare and portion a wide variety of food products including meats, poultry, seafood, and vegetables prior to cooking.
- Set up the grill station with all necessary supplies, equipment, and prepped ingredients, ensuring everything is organized and within reach for efficient service.
- Accurately measure ingredients and portion foods, ensuring consistency in dish presentation and adherence to company recipes.
- Monitor grill temperatures to ensure all food items are cooked to the correct internal temperature and desired doneness as ordered by the customer.
- Properly label, date, and store all prepped food items and leftovers in accordance with food safety guidelines to prevent spoilage and cross-contamination.
- Assist in plating and garnishing grilled dishes, ensuring they are visually appealing and meet restaurant presentation standards before being sent to the customer.
- Manage ticket times by communicating effectively with the Grill Cook and expediter, ensuring orders are fired and completed in a timely manner.
- Adhere strictly to all sanitation, food safety, and hygiene standards as dictated by health department regulations and company policy.
- Restock the grill station with ingredients, sauces, and supplies as needed during service to prevent delays and maintain workflow.
- Execute basic cooking tasks on the grill under supervision, such as toasting buns, warming side dishes, and cooking less complex items.
- Inform the lead cook or kitchen manager of any equipment malfunctions or safety hazards in the work area immediately.
- Participate in deep cleaning schedules for the kitchen, focusing on the detailed breakdown and sanitization of grill equipment.
- Receive and properly store incoming food and supply deliveries, checking for quality and accuracy against invoices.
- Learn and maintain up-to-date knowledge of all menu items, including ingredients, preparation methods, and potential allergens.
- Support the Grill Cook by flipping, turning, and moving food on the grill to ensure even cooking during high-volume periods.
- Dispose of all food waste and trash in the proper receptacles, contributing to a clean and organized kitchen environment.
- Follow all recipe and portioning guides precisely to minimize waste and ensure cost control for the restaurant.
- Communicate inventory needs for the grill station, such as low stock on specific meats or spices, to the kitchen manager for reordering.
Secondary Functions
- Provide support to other kitchen stations, such as fry or pantry, during periods of high demand or staff shortages.
- Assist with monthly and weekly inventory counts of food supplies and other kitchen consumables.
- Contribute ideas for daily specials or menu improvements based on observations and developing culinary knowledge.

Educational Background
Minimum Education:

Experience Requirements
Typical Experience Range: 0 - 2 years in a food service or kitchen environment.
Preferred:
- 6+ months of experience working in a restaurant kitchen as a dishwasher, prep cook, or in another support role is highly advantageous.
