Core Responsibilities

Primary Functions

  • Operate and meticulously monitor large-scale industrial steam-jacketed kettles to cook and mix food products according to established recipes and production schedules.
  • Accurately weigh, measure, and stage raw ingredients and materials required for each specific batch, ensuring strict adherence to formulation sheets and lot control.
  • Follow detailed Standard Operating Procedures (SOPs) for all aspects of equipment setup, operation, complex changeovers between products, and end-of-shift shutdown processes.
  • Maintain precise time and temperature controls throughout the entire cooking cycle, using gauges, thermometers, and automated control panels to guarantee product consistency and safety.
  • Perform critical in-process quality checks, such as testing for viscosity, pH, brix, and color, and diligently record all results on official batch records.
  • Make necessary adjustments to equipment and cooking parameters based on real-time quality control feedback and personal observations to maintain tight product specifications.
  • Document all production activities, including batch numbers, ingredient lot numbers, processing times, and critical temperatures, with a high degree of accuracy on production logs and records.
  • Safely and efficiently transfer finished product from kettles to holding tanks or filling lines using a system of pumps, hoses, and other transfer equipment.
  • Execute thorough cleaning and sanitization of kettles, pumps, utensils, and the surrounding work area in compliance with Good Manufacturing Practices (GMP) and food safety standards.
  • Adhere strictly to all company safety policies, including Lockout/Tagout (LOTO) procedures, proper use of Personal Protective Equipment (PPE), and safe chemical handling guidelines.
  • Proactively troubleshoot minor equipment malfunctions and operational issues, and promptly escalate more complex problems to the maintenance or supervisory team to minimize downtime.
  • Manage the continuous flow of raw materials from staging areas to the kettle, ensuring a seamless and efficient production process that meets daily targets.
  • Conduct detailed pre-operational inspections of all equipment to verify it is in a safe and sanitary working condition before commencing any production activities.
  • Collaborate effectively with Quality Assurance personnel to address any deviations from product specifications and assist in implementing appropriate corrective actions.
  • Assist in the hands-on training of new Kettle Workers, sharing practical knowledge of procedures, safety protocols, and quality standards to build team capability.
  • Participate in inventory management by carefully tracking the usage of raw ingredients and packaging materials for each batch produced.
  • Operate material handling equipment, such as pallet jacks and forklifts (if certified), to safely move heavy loads of ingredients and finished goods.
  • Ensure all allergen handling and cross-contamination prevention procedures are meticulously followed during both production and sanitation cycles.
  • Monitor the consumption of utilities like steam, water, and compressed air, reporting any unusual fluctuations to maintain operational efficiency and support sustainability goals.
  • Contribute actively to continuous improvement initiatives by identifying and suggesting opportunities for enhanced safety, quality, and productivity within the kettle operating area.
  • Verify and document that all Critical Control Points (CCPs) identified within the site's HACCP plan are monitored and maintained within their established critical limits.
  • Read and correctly interpret daily and weekly production schedules to effectively plan and prioritize cooking tasks and ingredient staging.

Secondary Functions

  • Assist Quality and R&D teams by preparing small-scale test batches and carefully documenting the process and results.
  • Provide practical, hands-on feedback on new recipes or process changes during trial runs to ensure feasibility on the production floor.
  • Work alongside the sanitation team to coordinate and ensure effective, timely cleaning of shared production areas and equipment.
  • Participate in daily production huddles and safety toolbox talks to stay informed, share insights, and contribute to overall team goals.

Required Skills & Competencies

Hard Skills (Technical)

  • Industrial Kettle Operation: Proven ability to operate, monitor, and clean large-scale steam-jacketed kettles or similar batch cooking equipment.
  • GMP & HACCP Knowledge: Strong understanding of Good Manufacturing Practices, food safety principles, and Hazard Analysis Critical Control Point systems.
  • Basic Mathematics: Proficiency in basic math, including addition, subtraction, multiplication, and division, for accurate ingredient weighing and recipe scaling.
  • Procedural Adherence: The ability to read, comprehend, and strictly follow Standard Operating Procedures (SOPs), batch sheets, and safety guidelines.
  • Sanitation Procedures: Experience with food-grade cleaning chemicals and sanitation processes (Clean-In-Place/Clean-Out-of-Place).
  • Quality Control Testing: Familiarity with using basic quality testing equipment such as thermometers, pH meters, and refractometers.

Education & Experience

Educational Background

Minimum Education:

Experience Requirements

Typical Experience Range:

  • 1-3 years of hands-on experience in a food manufacturing, pharmaceutical, or similar regulated production environment.

Preferred:

  • Direct experience as a Kettle Operator, Batch Maker, Compounder, or Cook in the food and beverage industry. Experience working in a USDA or FDA-regulated facility is a significant plus.
