Core Responsibilities
Primary Functions
- Operate commercial-grade dishwashing machinery efficiently, loading and unloading racks of dishes, glassware, and silverware to ensure a continuous supply for service.
- Meticulously pre-rinse and scrub heavily soiled pots, pans, and kitchen utensils by hand in a three-compartment sink, following proper sanitation procedures.
- Ensure all cleaned items are properly stored in their designated locations, helping to maintain an organized and efficient kitchen environment.
- Uphold all health department and company sanitation standards, consistently monitoring water temperatures and chemical levels in the dish machine.
- Systematically break down, clean, and de-lime the dish machine at the end of each shift to ensure optimal performance and longevity.
- Regularly manage and dispose of kitchen waste, compost, and recycling, ensuring trash receptacles are emptied and sanitized to prevent odors and pests.
- Meticulously sweep and mop kitchen floors, walk-in coolers, and storage areas to prevent slip hazards and maintain a high level of hygiene.
- Clean and sanitize all food preparation surfaces, counters, and kitchen equipment as directed by the Chef or Kitchen Manager.
- Safely handle and dilute all cleaning chemicals according to manufacturer and safety guidelines, using appropriate personal protective equipment (PPE).
- Monitor and report any maintenance or repair needs for the dish machine, plumbing, or other kitchen equipment to management promptly.
- Assist in receiving and properly storing food and supply deliveries, rotating stock using the First-In, First-Out (FIFO) method.
- Maintain cleanliness of employee restrooms and back-of-house common areas to ensure a pleasant and sanitary work environment for all staff.
- Polish silverware, glassware, and other service items as needed to ensure they meet the highest standards for guest presentation.
Secondary Functions
- Provide basic assistance to the culinary team with simple food preparation tasks, such as washing vegetables, peeling potatoes, or portioning ingredients, as directed.
- Help with the setup and breakdown of kitchen stations before and after service periods to ensure smooth operational transitions.
- Restock all service areas with clean plates, glassware, and flatware throughout the shift to prevent service interruptions.
- Keep all dishwashing and cleaning supply storage areas neat, organized, and properly inventoried, alerting management to low stock levels.
- Proactively assist other team members during peak service hours to help manage workflow and reduce bottlenecks in the kitchen.
- Adhere strictly to all food safety and workplace safety protocols to create a secure environment for yourself and your colleagues.
- Participate in regular deep-cleaning projects for the kitchen and storage areas as scheduled by the management team.
- Maintain a positive and professional demeanor while collaborating with all kitchen and front-of-house staff to foster a supportive team atmosphere.
