Core Responsibilities

Primary Functions

  • Perform comprehensive diagnostic tests and troubleshooting on a wide array of commercial kitchen equipment, including combi-ovens, fryers, grills, ranges, and steamers.
  • Execute timely and effective repairs on gas, electric, and steam-powered cooking, refrigeration, and food preparation equipment to minimize operational downtime.
  • Conduct regularly scheduled preventive maintenance programs, including cleaning, calibrating, and lubricating equipment to prolong its lifespan and prevent unexpected failures.
  • Skillfully read and interpret complex electrical schematics, wiring diagrams, and technical manufacturer manuals to accurately diagnose and resolve equipment issues.
  • Install new commercial kitchen equipment according to manufacturer specifications, local safety codes, and the specific operational requirements of the facility.
  • Respond promptly and professionally to emergency service calls, assessing situations quickly and implementing effective, durable solutions, often under pressure.
  • Calibrate thermostats, timers, pressure gauges, and other control systems to ensure equipment operates at optimal efficiency and within safe temperature parameters.
  • Disassemble and reassemble complex mechanical, electrical, and plumbing components for deep cleaning, part replacement, or intensive repair.
  • Troubleshoot and repair commercial refrigeration and freezer units, including walk-in coolers, reach-in freezers, and ice machines, ensuring proper temperature and function.
  • Test all equipment post-repair to rigorously verify that the root cause of the issue has been resolved and the unit is functioning safely and efficiently.
  • Communicate effectively with Kitchen Managers, Chefs, and staff to understand equipment performance issues and schedule maintenance to minimize disruption to service.
  • Maintain a clean, safe, and organized work environment, adhering to all health, safety, and sanitation regulations (e.g., OSHA, HACCP).
  • Identify and troubleshoot issues within ventilation and exhaust systems, including hood vents and fans, to ensure proper air quality and fire safety.
  • Perform minor welding, brazing, or soldering tasks as required for structural or component repairs on various pieces of equipment.
  • Evaluate the condition of aging equipment and provide detailed, data-backed recommendations for replacement or major overhauls to inform capital expenditure decisions.
  • Stay current with the latest industry technologies, new equipment models, and innovative repair techniques through continuous professional development and training.
  • Perform water quality tests and maintain water filtration systems connected to kitchen equipment like ice machines, steamers, and coffee makers.
  • Address plumbing issues related to kitchen equipment, such as repairing leaks in dishwashers, steamers, and sinks.
  • Rotate on-call duties for after-hours and weekend emergency service requests to ensure 24/7 operational support.
  • Train and advise kitchen staff on the proper daily operation, cleaning procedures, and simple troubleshooting for equipment to reduce service calls.

Secondary Functions

  • Maintain a precise and organized inventory of spare parts, tools, and supplies, processing orders to replenish stock and prevent delays in repairs.
  • Meticulously document all maintenance activities, repairs, and installations in a Computerized Maintenance Management System (CMMS) for tracking and reporting.
  • Liaise with third-party vendors and contractors for specialized repairs, warranty service, or sourcing of hard-to-find parts.
  • Participate in the planning and execution of kitchen renovations or equipment upgrade projects, providing technical input and expertise.

Required Skills & Competencies

Hard Skills (Technical)

  • Deep proficiency in diagnosing and repairing commercial gas, electric, and steam-powered cooking equipment.
  • Strong working knowledge of commercial refrigeration systems, with CFC/EPA or HVAC-R certification being highly desirable.
  • The ability to expertly read and interpret electrical schematics, blueprints, and technical service manuals.
  • Proven experience with implementing and managing preventative maintenance (PM) schedules and programs.
  • Solid understanding of plumbing and ventilation systems as they relate to commercial kitchen operations.
  • Familiarity with a wide variety of commercial kitchen equipment brands (e.g., Hobart, Rational, Frymaster, Garland, True).
  • Competent use of diagnostic tools, including multimeters, pressure gauges, temperature probes, and combustion analyzers.
  • Foundational skills in welding, brazing, and soldering for minor fabrication and repair tasks.
  • Thorough knowledge of local, state, and federal health and safety regulations and building codes.
  • Experience utilizing CMMS software for managing work orders, tracking assets, and maintaining service logs.
