Core Responsibilities
Primary Functions
- Skillfully cut, trim, and bone various types of meat, including beef, pork, poultry, and lamb, according to precise company specifications and standards.
- Operate commercial-grade meat processing equipment such as band saws, slicers, grinders, and tenderizers with a strong emphasis on safety and efficiency.
- Provide exceptional, personable customer service by answering questions about cuts, offering cooking advice, and fulfilling special orders for custom cuts.
- Grind various meats to create fresh ground beef, pork, sausage, and other blends, ensuring quality and consistency.
- Prepare and package a wide array of meat products, including sausages, marinated items, kabobs, and other value-added, ready-to-cook meals.
- Break down large primal cuts of meat into smaller, retail-ready portions like steaks, roasts, chops, and cutlets.
- Set up, maintain, and merchandise attractive and well-stocked meat display cases to entice customers and drive sales.
- Accurately weigh, price, and apply labels to all meat products, ensuring compliance with weights and measures regulations.
- Develop a deep, comprehensive understanding of the different cuts of meat and effectively communicate their attributes and best cooking methods to customers.
- Monitor product quality and freshness continuously, removing any items from the case that do not meet our high standards for appearance and safety.
- Sharpen and properly maintain a set of professional knives and other cutting tools to ensure precision, safety, and longevity.
- Fulfill customer requests for specialty grinds, custom thickness on steaks, and unique preparations, providing a personalized shopping experience.
- Receive, inspect, and properly store incoming meat shipments, verifying quality, temperature, and freshness upon arrival.
Secondary Functions
- Manage and rotate all meat department inventory to minimize spoilage and waste, strictly adhering to FIFO (First-In, First-Out) principles.
- Maintain a meticulously clean, safe, and sanitary work environment, including all equipment, coolers, and cutting rooms, in compliance with health department and company food safety standards.
- Adhere strictly to all OSHA, USDA, and local health department regulations, including HACCP protocols and proper temperature logging.
- Assist the Meat Department Manager in controlling department expenses by improving operational efficiency and actively working to reduce shrink (product loss).
- Participate in regular inventory counts and assist in placing orders for meat products, packaging, and other departmental supplies.
- Assist in training and mentoring new meat department associates or apprentices on proper cutting techniques, safety protocols, and customer service standards.
- Unload and transport meat deliveries, which may weigh up to 80-100 pounds, from the receiving dock to the walk-in coolers and cutting room.
