Core Responsibilities
Primary Functions
- Operate and control industrial ovens (batch, conveyor, curing, drying or baking) by programming or selecting appropriate setpoints on PLC/HMI interfaces to achieve specified temperature profiles, dwell times and production rates while maintaining strict adherence to SOPs.
- Monitor oven temperature, airflow, belt speed and humidity controls continuously during shifts; make real-time adjustments to maintain product specification tolerances and minimize rejects.
- Load and unload product safely and efficiently, ensuring proper orientation, spacing and staging to prevent thermal damage, under- or over-cooking, or uneven curing.
- Perform standardized product quality checks during and after oven processing — including visual inspection, weight checks, moisture readings and temperature verification — and document findings per batch records and quality logs.
- Execute scheduled changeovers between product SKUs, including cleaning, tool changes, reprogramming oven recipes, conveyor adjustments and revalidation of run parameters to meet first-run quality targets.
- Conduct routine preventative maintenance tasks (belt inspection, gasket replacement, thermocouple checks, lubrication) and basic troubleshooting to reduce unplanned downtime, escalating complex repairs to Maintenance.
- Follow lockout/tagout (LOTO) and confined space procedures where applicable prior to performing maintenance, cleaning or adjustment activities on oven equipment.
- Maintain accurate production records including run sheets, oven temperature logs, throughput counts, downtime logs and yield calculations to support traceability and continuous improvement.
- Adhere to all food safety and sanitation standards (GMP, HACCP, SQF or company-specific requirements) during oven operation, CIP/COP cycles and sanitation shutdowns; participate in scheduled cleanings and validate cleanliness according to checklists.
- Calibrate and verify key monitoring instruments (thermocouples, RTDs, in-line temperature sensors), partner with QA/Calibration teams to ensure measurement accuracy and regulatory compliance.
- Respond to in-process deviations, non-conforming product or alarm conditions by investigating root cause, implementing containment (hold/rework) and documenting corrective actions in deviation reports.
- Support in-process sampling for laboratory analysis (e.g., moisture content, microbial swabs, cure profiles), coordinate with Quality team to schedule samples and implement actions based on lab results.
- Control and monitor related upstream/downstream equipment (feeders, metering systems, cooling tunnels, conveyors) to ensure coordinated line performance and prevent bottlenecks or product damage.
- Implement and participate in continuous improvement efforts (5S, Kaizen, SMED) to reduce changeover time, increase throughput and improve oven energy efficiency and yield.
- Train and mentor new operators on safe oven operation, SOPs, QA checks, and emergency procedures; create or update operator job aids and quick-reference guides as required.
- Maintain compliance with environmental, health and safety regulations (OSHA, local environmental rules) including proper PPE use, emergency stop protocols and reporting near-misses or hazards.
- Assist in root cause analysis for recurring oven or product quality issues, providing operational insights and cooperating with Engineering and Maintenance to deploy corrective actions and process controls.
- Manage inventory and yarding of oven-related consumables (belts, seals, thermocouples, cleaning chemicals) and notify supervisors of low stock to prevent interruptions.
- Execute shift-to-shift handovers, communicating oven settings, anomalies, maintenance events and quality trends to incoming personnel to ensure continuity of operations.
- Participate in internal and external audits by providing process records, demonstrating oven operation and answering questions related to sanitation, calibration and SOP adherence.
- Operate auxiliary controls such as fans, dampers, burner controls, and electrical heaters safely and efficiently, and document any manual overrides or temporary changes to standard recipes in the batch log.
- Ensure product traceability from load to finished product by properly labeling batches, maintaining lot numbers, and completing necessary electronic or paper documentation for recall readiness.
Secondary Functions
- Assist Production Planning and Supervisors by providing real-time production status, anticipated changeover times and estimated completion times to support scheduling and customer commitments.
- Support sanitation teams during scheduled deep cleanings and CIP/COP cycles, including disassembly/reassembly of oven components and verification of cleaning completion.
- Help implement and validate new oven recipes and process parameters during trial runs; provide operator feedback to Process Engineering for recipe optimization.
- Contribute to cross-functional teams (Quality, Maintenance, Engineering) to update SOPs, maintenance schedules and safety protocols based on operational experience.
- Participate in training workshops and continuous improvement sessions; suggest procedural improvements to reduce waste, extend component life and improve energy consumption.
- Provide backup support for related production roles (e.g., conveyor operator, packaging line support) during peak demand or short staffing situations.
- Maintain cleanliness and orderly work environment in oven area in accordance with 5S and company housekeeping standards.
- Generate and compile daily/weekly production metrics and performance reports for supervisor review and production meetings.
- Assist with inventory count and requisitioning of oven parts and supplies; verify receipt of replacement parts and support basic parts installation.
- Participate in accident/incident reviews by providing accurate account of events and supporting corrective action implementation.
Required Skills & Competencies
Hard Skills (Technical)
- Industrial oven operation (batch, continuous/conveyor, curing, drying, drying tunnels, rotary ovens)
- PLC and HMI operation and basic troubleshooting (Allen-Bradley, Siemens, or equivalent)
- Temperature profiling, thermocouple/RtD calibration and thermal process control
- Knowledge of SOPs, GMP, HACCP, food safety standards and sanitary operating procedures (for food-related roles)
- Preventive maintenance tasks and basic mechanical troubleshooting (belts, bearings, burners, motors)
