Core Responsibilities

Primary Functions

  • Design, plan and execute fermentation experiments and trials (bench- and pilot-scale) to evaluate yeast, bacterial and enzyme performance for product development and process optimization; maintain detailed experimental plans and timelines.
  • Monitor and control fermentation parameters (temperature, pH, dissolved oxygen, agitation, nutrient feed) in real time using SCADA/PLC interfaces and laboratory instrumentation to ensure consistent batch performance.
  • Develop, validate and run analytical methods for fermentation monitoring including HPLC, GC, GC-MS, spectrophotometry, refractometry (Brix), enzymatic assays, and titratable acidity; interpret chromatograms and generate actionable reports.
  • Perform microbiological assays including aseptic technique, plating and colony counts, MPN/CFU determination, microscopy, gram staining, viability staining, and cell density measurements to assess culture health and contamination.
  • Maintain and manage culture collections and master/working seed banks for yeast and bacterial strains, including propagation, storage (cryopreservation), viability testing and traceability documentation per SOPs.
  • Execute molecular microbiology techniques such as qPCR, PCR-based strain identification, and basic sequencing workflows to detect, quantify and genotype fermentation microbes and contaminants.
  • Lead root-cause investigations for off-specification fermentations, contamination events, or analytical abnormalities; synthesize data from logs, analytics and sensory panels to recommend corrective and preventive actions (CAPA).
  • Implement and follow GMP, HACCP, OSHA, and other regulatory and safety protocols during all laboratory and pilot-scale fermentation activities; participate in internal audits and inspections.
  • Create and maintain thorough laboratory documentation including batch records, lab notebooks, SOPs, validation protocols, and LIMS entries to ensure reproducibility and regulatory compliance.
  • Collaborate with R&D, production, QA/QC, and supply chain to facilitate process transfers from lab to pilot and commercial scales, providing technical support for scale-up, risk assessment and capacity planning.
  • Design and analyze experiments using statistical tools and DOE methodologies to optimize media, fermentation parameters, and downstream processing steps for yield, productivity and flavour/quality attributes.
  • Perform sensory support and coordinate with sensory panels to link fermentation parameters to product flavor, aroma and mouthfeel outcomes; translate sensory feedback into fermentation control strategies.
  • Develop and implement sampling plans and quality control testing regimes for raw materials, in-process samples and finished fermented products to ensure safety and specification conformance.
  • Maintain, calibrate and troubleshoot laboratory equipment and pilot-scale bioreactors (control systems, probes, pumps), coordinating with maintenance and vendors to minimize downtime and ensure data integrity.
  • Prepare technical reports, presentations and standard operating procedures that summarize experimental outcomes, process capabilities and recommendations for both technical and non-technical stakeholders.
  • Manage consumables, reagents and media inventory for fermentation labs; forecast needs for upcoming experiments and pilot runs while controlling costs and ensuring reagent quality.
  • Train, mentor and supervise junior technicians and interns in laboratory best practices, aseptic technique, instrument operation, and data recording to build team capability and ensure consistent results.
  • Participate in cross-functional project teams for new product launches, providing zymology expertise for formulation, shelf-life, regulatory filings and manufacturing readiness.
  • Support continuous improvement initiatives by identifying process inefficiencies, implementing process controls and automation opportunities, and tracking key performance indicators (KPIs) for fermentation operations.
  • Conduct environmental monitoring and cleanliness verification in fermentation and seed preparation areas to reduce contamination risk and support sanitary design improvements.
  • Coordinate outsourced analytical testing or contract lab work when specialized assays are required, managing data exchange, method validation and vendor qualification.
  • Evaluate and recommend new analytical instrumentation, software (LIMS, instrument control) and laboratory methodologies to increase throughput, accuracy and regulatory compliance.
  • Ensure data governance and integrity by applying version control, audit trails and standard file naming conventions; participate in data review and sign-off procedures for critical experiments.
  • Lead pilot-scale troubleshooting sessions and post-run reviews to capture lessons learned, update SOPs, and formalize risk mitigations for future runs.
  • Engage with regulatory and quality teams on labeling, ingredient declarations and microbial safety limits to ensure products meet regional and international standards.

Education & Experience

Educational Background

Minimum Education:

  • Bachelor’s degree in Microbiology, Biochemistry, Food Science, Fermentation Science, Chemical Engineering or related life science discipline.

Preferred Education:

  • Master’s degree in Fermentation Science, Biotechnology, Microbiology, Food Science, or a related field; or equivalent industrial experience and certifications.
